My favorite blueberry muffins......

These muffins are so delicious.  My sweet friend Jenny, who always makes delicious treats, brought me a plate months ago and I pretty much finished the entire plate that night.  They are so moist and have the best top of all!  They are also easy to make & look like they are from a bakery.  They call for mashed bananas so you can use up the ripe ones if you have them, but I really like fresh yellow bananas in this recipe.  Try them, try them, you will see.

Blueberry Banana Muffins

2 c flour
2 tsp baking powder
1/2 tsp salt
1 c sugar
1/3 c butter, room temp
2 eggs
1 c mashed bananas (about 2 medium)
1 tsp vanilla
1-2 c fresh blueberries

Preheat oven to 350.  Line muffin tins with liners or parchment.  Sift flour, baking powder, salt, and sugar together with a wire wisk.  Add butter, eggs, bananas, and vanilla.  Mix on low until just combined.  Fold in blueberries.  Reserve some to place on tops.  Sprinkle with a generous amount of course sugar.  Bake for about 20 minutes or until toothpick comes out clean.

I use a good amount of blueberries.  Only fresh!  Jenny told me to press some on the tops, makes it looks so pretty & the course sugar too.  The only problem with this recipe is they really do disappear too quickly.  Need to triple it next time.  Enjoy!
